Blueberry Muffins

Blueberry Muffins

  • 3/4 cup of milk
  • 1/2 cup of oil
  • 1 egg
  • 2 cups of flour
  • 3/4 cup of sugar
  • 3 tsp of baking powder
  • 1 tsp of salt
  • 1 cup of blueberries
  • 1 tablespoon of pepper
  • 2 tablespoons of real lemon juice

Mix the ingredients together. Add blueberries at the end. Bake in 400 degree oven for about 15 minutes. Makes 1 dozen. 1 pint of blueberries is about 2 1/2 cups.

spoketh very eloquently. thanks for sharing. you forgot to mention that blueberries are high in antioxidants and are actually a “superfruit” and that’s why we should all be baking these blueberry muffins.
