4 lb. sweet potatoes cut into large chunks<br />
2 tbs. olive oil<br />
1 cup chestnut pieces<br />
3 tbs. butter<br />
1 cup shallots cut into large chunks<br />
1/4 cup of brandy<br />
salt and pepper to taste</p>
<p>Bake the bacon at 425 degrees for 5 minutes, turn bacon and bake until finished.  Let bacon cool and chop into large pieces, set aside.  Expect 1/2 bacon to be eaten before being mixed. </p>
<p>Toss sweet potato pieces with oil, salt and pepper. Mix in shallots, chestnuts and bacon.  Place in roasting pan.  Place butter pats on top.  Sprinkle port wine over mixture.  Bake at 350 degrees for 1-2 hours.</p>

2 cups buttermilk</p>
<p>Sift together flour, baking power, salt, baking soda, sugar.  Add butter and raisins and mix with hands.  Add about 1 1/2 cups of buttermilk and mix (add more buttermilk till desired consistency).  Add caraway seeds.  Put dough into greased cast iron pan (for crust) and cut a shallow cross on the top.  Bake at 375 degrees for an hour or longer until top is golden brown. </p>

<p>Mix all the ingredients except the oats, flour and raisins.  Then, stir in the oats, flour and raisins. Drop the dough as rounded balls using a spoon about 2 inches part onto an ungreased cookie sheet.  Bake at 375 until lightly brown (about 10 minutes).  Immediately remove from the cookie sheet.</p>

<p>Stir the vinegar into the milk as a substitute for buttermilk.  Beat all ingredients on low speed for 30 seconds.  Then beat the ingredients on high speed for 3 minutes.  Pour the batter into a greased rectangular pan 13&#215;9 or two 8” round pans.   Bake in a 350 oven for about 35 to 40 minutes.</p>
